I’m always looking to try new green juices. Lately I’ve been enjoying bell peppers so I decided to try a green juice with a yellow bell pepper, an english cucumber and a lemon.

The resulting juice was mild and slightly tart. As you taste this juice, you’ll taste the bell pepper first, then the cucumber and finally the lemon.

This delicious and refreshing bell pepper cucumber lemon juice will not only quench your thirst but it will also provide you with good amounts of vitamin A, B-6 and C as well as a variety of minerals.

Makes 1.5 cups

Here’s what you’ll need:

  • 1 english cucumber
  • 1 yellow bell pepper
  • 1/4 lemon

Start by thoroughly washing all of your ingredients. This will include your english cucumber, yellow bell pepper and your lemon.

Then cut your cucumber into slices and cut your bell pepper into slices as well. Cut one quarter of your lemon and set aside.

Note: If you buy organic produce, you should leave the skin/peel on because that is where a majority of the vitamins and nutrients are. If you didn’t buy organic produce, it’s best to remove the rind so that you eliminate any possible pesticides.

Put all of this now in your juicer. Start with your lemon. Then I alternate with slices of cucumber and bell pepper because it seems to help process everything better and allows the flavors to mix better.

Once juiced, you will be ready to enjoy your bell pepper cucumber lemon juice!
