With the highs in the 90s here today in Los Angeles, all I wanted was a nice, cold, refreshing juice. I decided to go with an apple cucumber mint juice that would hydrate me while tasting delicious. This juice smells so good and leaves your kitchen filled with the sweet aroma of mint. It’s such a light juice but will leave you feeling refreshed and full of energy to battle the heat!

Apple Cucumber Mint Juice

Makes one cup

Apple Cucumber Mint Juice Recipe

Here’s what you’ll need:

  • 1 apple
  • 1/3 of a hot house cucumber (about 1 cup of cucumber slices)
  • 10 – 12 mint leaves

Start by thoroughly washing your apple, cucumber and mint leaves. Dry these off and bring them over to the cutting board. Pick your mint leaves from the sprigs and set aside. Chop your apple into small pieces and cut your cucumber into thick slices.

Then place the mint leaves in the juicer followed by your cucumber and apple chunks. I found that by putting the mint leaves in first, the cucumber and apple push through more of the mint into the juice.

When your juice is made, your kitchen will be filled with the wonderful mint aroma and you’ll be ready to enjoy this refreshing and cool summer afternoon pick me up juice!
