Peach Kale & OJ Smoothie (and me attempting to be decorative)

In the mood for a light and refreshing summer green smoothie? Then get out your blender and let’s make this smoothie! The combination of a fresh peach, curly kale, and fresh squeezed (or store bought) orange juice creates a surprisingly subtlety sweet tasting smoothie guaranteed to start your summer day off well.

Makes a one cup serving

Peach Kale OJ Smoothie Recipe

Here’s what you’ll need:

  • 1/2 cup of orange juice
  • One peach
  • 1.5 cups of curly kale (I bought kale at the Whole Foods instead of the local farmer’s market and the leaves were three times smaller so I ended up using three small curly kale leaves. When I ripped the leaves from the kale stem, it ended up being 1.5 cups so figured I’d let you know both in case!)

Peach Kale OJ Smoothie Ready to Be Blended

Start by thoroughly washing and drying your curly kale. Then rip the kale leaves from the stem and place in your vitamix or any other high powered blender. Discard the stem from the kale.

Next you should wash your peach, and then cut into smaller pieces and place in the blender. Discard the pit of the peach.

Finally, throw in your half cup of orange juice. If you have fresh squeezed, this smoothie just tastes even better. If not, of course store bought orange juice works just as well. Either way place the orange juice in the blender and blend this mixture until well processed so that a smooth texture is achieved.

If you aren’t using a vitamix or other high powered blender, you may need to add more orange juice in order for this to blend well.

This will make one 1 cup serving. Enjoy for breakfast with a bowl of your favorite cereal or a piece of toast with hummus or guacamole. You can also enjoy this as a summer afternoon snack to beat the heat. For a more frozen smoothie, use frozen peaches or add in a couple ice cubes to this recipe!
