Winter is setting in, so what better way to warm yourself than with a slice of warm cranberry banana nut bread. That is exactly what I was thinking this morning, so I set off to bake. I hope you all enjoy this winter bread recipe!

Total time: 1 hour 15 minutes

Here’s what you’ll need:
2 cups whole wheat flour
1/2 cup packed light brown sugar
3 over ripe bananas
1/4 cup of orange juice
1 medium orange (to zest)
1/2 cup of applesauce
1/4 teaspoon of salt
1 tablespoon of baking soda
1 teaspoon of baking powder
3/4 cup of fresh cranberries
1/2 cup of chopped walnuts
(Note: you can use pecans if you prefer)

To start, preheat your oven to 350 degrees. Then you are ready to set to work preparing all of your ingredients.

Start with your dry ingredients. In a medium sized mixing bowl, add your flour, sugar, salt, baking soda, baking powder, and walnuts. Stir until well mixed.

Then move onto your wet ingredients. In a large mixing bowl, mash your bananas. Then add your applesauce and orange juice. Mix well.

Slowly add your dry mixture to the wet mixture, mixing thoroughly. When everything is well mixed, zest the orange and added in the fresh cranberries. I folded the cranberries in gently so as not to squish or puncture them. (This ended up being amazing because when eating a slice of bread, the whole cranberries were little flavorful explosions of sweetness.)

I poured the batter into two separate bread pans to make two smaller loafs, though I assume you could simply pour it into one bread pan if you preferred. Bake for 45 to 50 minutes or until an inserted toothpick comes out clean.
