Me and my finished tofurky!

This is my first official Tofurky Thanksgiving!

I wanted to have a vegan meal and tofurky seems like the best, and only way, to go on this holiday for a main dish. 

So to prepare for the big day, I decided to make a tofurky meal early so that I could adjust it, if necessary, to ensure it will be a perfect tofurky meal for Thanksgiving.

I am posting this recipe for those of you looking for a tofurky recipe for your Thanksgiving meal. This is pretty basic and my first real try so if you are more experienced in tofurky meals, feel free to comment and let me know how you prepare this holiday meal!

Here’s what you’ll need…

  • Tofurky roast
  • 2 potatoes
  • You can substitute yams for potatoes.

    This is the tofurky I used.

  • 6 celery stalks
  • You can substitute 2-3 carrots for celery.

  • 1 large onion
  • 4 cloves of garlic
  • 1 handful of sage
  • 1 tablespoon of soy sauce
  • 3 tablespoons of olive oil

Preheat oven to 350 degrees.

Tofurky and vegetables now drizzled with gravy and ready for the oven.

While you wait for your oven to preheat, you can do all of your prep work. Start by peeling your potatoes or yams. Then quarter your potatoes or yams. Peel your onion and cut into large wedges, about a little bit bigger than a slice of lemon. Wash your celery or carrots and cut into about two inch chunks. Peel your cloves of garlic. Wash your sage and chop into fine pieces.

Now remove your thawed tofurky from its package and place in the center of a casserole dish. Place your garlic, onion, celery and potatoes around the tofurky in your casserole dish. Sprinkle your finely chopped pieces of sage over the vegetables and the tofurky.

Then take half of the gravy that comes with the tofurky and warm in a pot over medium heat, stirring constantly. The gravy will be the right consistency in about five minutes. Turn off the heat. Splash in a tablespoon of soy sauce and three tablespoons of olive oil. Mix thoroughly and then pour over the sage, vegetables, and tofurky.

Now your tofurky is ready to be put in the oven!

Here is the finished tofurky!

Bake in the oven for one hour and fifteen minutes covered tightly in aluminum foil.

Note: If your tofurky isn’t thawed you will need to adjust your baking time for that. In this case, increase it to two hours and twenty minutes.

After the tofurky has been cooked for the correct amount of time, remove the aluminum foil and bake for an additional ten minutes.

Use this last ten minutes to prepare the remaining gravy to pour over your finished tofurky and vegetables. Put the other half of the remaining gravy in the pot and warm over medium heat. Stir constantly until the gravy is warm and the correct consistency. Your gravy will be done close to the time your tofurky is finished.

At this point, take out your tofurky and let cool before slicing and serving with additional warm gravy on top!
