My recipe for today is a pesto spaghetti with sautéed vegetables. This recipe is one of my favorite pasta dishes, and not only it is very simple to make but it is also very delicious and nutritious.

Total Time: 30 minutes

To make sure everything is ready on time, boil your water while you do your prep work. Then simply sauté your vegetables while the your spaghetti is cooking.

-1/2 yellow onion
-3 to 4 garlic cloves
-2 handfuls of spinach
-4 baby bella mushrooms
-1/2 box of whole grain spaghetti
-Pesto (to taste)
-Olive oil

While you wait for your water to boil for your spaghetti, you can do all your prep work chopping your vegetables. Start by chopping your yellow onion. Then finely chop your garlic. Wash the spinach and chop into small pieces. Wash your mushrooms well and then chop those as well.

Now that your prep work is done, your water should be boiling. Put your spaghetti in the pot to cook.

While you wait for your spaghetti, put a pan to sauté your vegetables in on medium heat with some olive oil. In a couple minutes, when this has warmed up, you can put your onions and garlic in the pan. When the onion looks tender and starts to become see through, you can put in the mushrooms. I wait until the garlic, onion and mushrooms look browned and delicious before I put the spinach in, which I only cook for about two minutes, stirring frequently.

Now that your vegetables are done, your spaghetti should be done as well. Drain your spaghetti, put back in the pot and add the pesto. When you have the desired amount of pesto mixed into your spaghetti, you can add the sautéed vegetables.

Mix well and serve hot!
