So I decided to make banana muffins…

Banana bread muffins all ready to go into the oven!

I have actually never made banana muffins or bread without eggs or butter, so this was my first try. I think it actually came out pretty good for a first time. They were moist and delicious!

Yield 12 muffins

2 ripe bananas
1/4 cup maple syrup
1/4 cup apple sauce
1 1/4 cup whole wheat flour
1/2 tsp vanilla extract
1/2 tsp cinnamon
1/2 tsp salt
1/2 tsp ground nutmeg
1/2 tsp baking soda
1/2 tsp baking powder

Banana muffins just out of the oven!

Optional: Other variations of this recipe include adding walnuts or chocolate chips to this recipe. Experiment to find out what you like!

Preheat oven to 350 degrees.

Mash the bananas in a separate bowl. Then add the other wet ingredients and mix well. In a separate bowl, mix the dry ingredients. Then add the dry ingredients to the wet ingredients slowly, mixing thoroughly.

Pour mix into muffin tins and put in oven. Bake for 20 minutes. Let cool and enjoy your delicious banana muffins!
